The story
Juan started at California Pizza Kitchen washing dishes, worked his way to the pizza station, and found the craft that would define his career.
He joined Posto in 2010 and became Executive Chef in 2016. His work is rooted in AVPN-style Neapolitan pizza, with a modern, personal edge—from classic wood-fired pies to combinations like peach and prosciutto.
He’s been part of the Gozney family since 2020, sharing the craft of live-fire cooking with a global audience.
